Restaurante La Cabaña de la Dehesa
On the edge of Fuenlabrada's residential Loranca neighbourhood, La Cabaña de la Dehesa has been roasting suckling pig and lamb in a wood-fired horno de leña since the mid-1990s, drawing loyal crowds from across the southern Madrid belt every Sunday. What to Order
The cochinillo asado — roasted suckling pig with crackling skin that shatters like porcelain — is the undisputed headline act and is carved tableside with theatrical flourish. Order it for two or more and pair it with a bottle of Ribera del Duero Crianza from the well-curated regional wine list.
Start with the judiones de La Granja, giant white beans slow-cooked with chorizo and black pudding in a clay pot that arrives still bubbling. The house bread, baked daily, is thick-crusted and perfect for mopping every last trace of cooking juice from the plate.
Atmosphere and Practicalities
The dining room is all exposed brick, dark timber beams and the faint perfume of woodsmoke — a deliberate antidote to the glass-and-steel aesthetic of Madrid's trendier restaurants. Tables fill quickly from 14:00 on Sundays, so a reservation made at least two days ahead is essential.
Prices are honest by Madrid standards: a full three-course Sunday lunch with wine and dessert rarely exceeds €35 per person. The staff are unhurried and happy to explain the provenance of each ingredient, which makes the meal feel like a genuine education in Castilian larder culture.
