The fish hall is outstanding for a landlocked city — suppliers drive up daily from Mercamadrid with Atlantic bream, razor clams and salt-cod that rivals anything you would find in a coastal town. Look for the stall run by the Romero family, which has been trading here for over forty years and always has the freshest percebes when the season allows.
The charcuterie vendors carry an impressive range of Iberian cured meats from Extremadura and Salamanca, sold in vacuum packs ideal for taking home. A handful of stalls specialise in seasonal Castilian vegetables — purple garlic from Las Pedroñeras, piquillo peppers and fat Calahorra artichokes — that rarely make it to supermarket shelves.

Several bar-counters ring the market's perimeter and open from 08:00, serving montaditos and a cold caña to stallholders and early shoppers alike. Order the tortilla de patata — it is made fresh every hour and served warm, which is the only way it should ever be eaten.
