What to order

Start with migas extremeñas — fried breadcrumbs tossed with chorizo, garlic, paprika and grapes, a dish that sounds humble and tastes extraordinary. Follow with secreto ibérico (the hidden cut from free-range Iberian pigs raised in the nearby dehesa), grilled over charcoal and served with roasted piquillo peppers.

The wine list leans heavily on Extremaduran producers: look for bottles from the Ribera del Guadiana DO, particularly the Tempranillo-Graciano blends from Viña Extremeña. A glass of local cherry liqueur (licor de cereza de Hervás) with dessert is non-negotiable.

Context and setting

The dining room is stone-walled and low-ceilinged, with exposed beams and the kind of unhurried pace that makes a two-hour lunch feel entirely reasonable. In summer, a small terrace opens onto a quiet side street.

Hervás sits at the heart of cherry country — the Valle del Jerte is just over the Sierra de Tormantos to the east — so in late spring the menu fills with cherry-based desserts, preserves and sauces that are unlike anything you will find outside this corner of Extremadura.
