Osteria del Binario
Tucked just below the old town near the train station, Osteria del Binario is the kind of place that regulars guard jealously — a small, family-run room where the menu changes with the season and the black-truffle strangozzi is one of the finest plates of pasta in the region. No tablecloths, no ceremony, pure Umbrian cooking.
What to Order
Start with a bruschetta drizzled with the house olive oil and topped with a scraping of fresh black truffle paste — simple and revelatory. Follow it with strangozzi al tartufo nero, the thick hand-rolled Umbrian pasta that grips the truffle sauce in every ridge.
In autumn, the menu expands to include wild boar ragù and roast pigeon with juniper, dishes that have been on Umbrian tables for centuries. Portions are generous; share a secondo between two if you want room for the walnut cake.
Practical Details
The room seats around 30, so booking a day ahead is wise, especially on Friday evenings and weekends. The wine list leans heavily on Sagrantino di Montefalco and Umbrian Grechetto whites, both available by the carafe at fair prices.
Service is brisk and warm in the way that only family operations manage. The owner's mother still makes the pasta by hand most mornings — you can sometimes see the drying racks through the kitchen hatch.
