Marché du Foirail (Halles de Pau)
Every Tuesday, Thursday and Saturday morning, the covered Halles de Pau and the surrounding place du Foirail erupt into one of the southwest's most authentic food markets, where farmers from the Béarn valleys arrive with black Bigorre pork, raw-milk Ossau-Iraty cheese wheels, and violet garlic that perfumes the whole square. This is where Pau actually eats.
What to Buy and Taste
The Ossau-Iraty — a firm, nutty sheep's-milk cheese made in the mountains above Pau — is the headline act; look for fromageries selling both young (doux) and aged (vieux) versions, and ask for a taste before you buy.
Garbure, the hearty Béarnaise cabbage and duck soup, sometimes appears ready-made in jars alongside confit de canard, foie gras and a staggering variety of dried Espelette peppers imported from just over the Basque border.
The Covered Halles Inside
The 19th-century iron-and-glass halles building houses permanent stalls selling charcuterie, wine from Jurançon AOC vineyards (grown on hillsides just south of the city), fresh fish from the Atlantic coast and Pyrenean trout.
Arrive before 10 am on Saturday for the full spectacle; by noon the best producers have sold out and begun packing up. A glass of Jurançon moelleux at the wine bar inside is a non-negotiable way to finish.
