Tucked beneath a vaulted stone arch just off the Plaza de los Teobaldos, Merindad de Olite is the kind of wine bar that makes you cancel your afternoon plans. The house pours Denominación de Origen Navarra reds and rosados direct from local bodegas, paired with pintxos that punch well above their price.
What to Order
Start with a chilled glass of Garnacha rosado — Navarre's proudly rustic answer to Provence rosé — alongside a pintxo of local chorizo on crusty bread rubbed with tomato. The combination is deceptively simple and completely addictive.
If the kitchen is running a full menu, order the cordero al chilindrón: slow-braised lamb with peppers and tomato that has been the signature dish of this region for centuries.
The Atmosphere
The bar fills with locals after 13:00 for the pre-lunch aperitivo ritual and again from 20:00 for the evening paseo crowd. Squeeze onto a stool at the zinc counter and let the barman guide you through the day's wines by the glass.
The stone walls, hanging jamón legs and handwritten wine lists give the place an authenticity that no interior designer could fake — this is simply how Navarrese people eat and drink.
