Lentil Soup & Petit Farci at La Parenthèse

Tucked into a vaulted stone room just below the cathedral steps on Rue Raphael, La Parenthèse is the kind of neighbourhood restaurant that travel writers keep secret for as long as possible. The menu changes with the market, but the Puy lentil soup with smoked sausage and the stuffed cabbage (petit farci) are fixtures that define local cooking at its most satisfying.

What to Order

Start with the soupe de lentilles vertes du Puy — the lentils are cooked just past al dente in a smoky, herb-rich broth with lardons and a swirl of crème fraîche. It costs around €8 and is better than versions served in far more expensive restaurants in Lyon or Paris.

For a main, the petit farci stuffed with pork, herbs and breadcrumbs, braised in tomato and white wine, is a textbook example of Auvergnat home cooking. Pair it with a glass of Côtes du Forez, the light Gamay-based red produced 60 km to the north — underrated and excellent value.

The Setting & the Vibe

The dining room occupies a 13th-century vaulted cellar with exposed basalt walls, candles on bare wooden tables and a blackboard menu that changes daily. It seats around 30, so reservations are essential on Friday and Saturday evenings.

Service is relaxed and genuinely friendly — the kind of place where the owner will tell you which farmer grew the lentils on your plate. Lunch menus (two courses) run from €14–18, making it exceptional value for the quality.
