All i Pebre at Restaurante La Gamba

All i pebre — a fiery, paprika-red stew of freshwater eel and potato cooked with garlic, dried ñora peppers and olive oil — is the defining dish of the Valencian wetland coast, and Restaurante La Gamba in Gandia's port district (Grau de Gandia) is one of the most respected places to eat it. This is not tourist food; it is the real, slightly challenging, deeply satisfying thing.

The Dish

All i pebre translates literally as 'garlic and pepper' and the name undersells it: a good version has layers of smoky depth from the ñora peppers, a gentle heat from cayenne, and the gelatinous richness of eel that thickens the broth naturally. Tear bread into the sauce. Order a cold glass of local Moscatel to cut through it.

La Gamba has been serving this dish and other traditional Valencian seafood since the 1960s; the dining room is unpretentious and the clientele is predominantly local, which is always a good sign. Portions are generous and prices are honest by any measure.

What Else to Order

The restaurant's arroz a banda — rice cooked in concentrated fish stock and served with alioli — is equally celebrated and worth ordering if you are visiting as a group. The rice arrives in a traditional paella pan, slightly socarrat (caramelised) at the base.

Start with tellinas (tiny clams) steamed open with garlic and white wine, or a plate of fresh anchovies from the Gandia catch. The dessert list is short but the homemade crema catalana is properly torched at the table.
