Tucked into a side street a block from Piazza della Repubblica, Osteria del Teatro is the kind of place Foligno locals have been eating lunch at for decades — paper tablecloths, a handwritten daily menu, wine from an unlabelled carafe and a kitchen that does one thing supremely well: Umbrian pasta with local black truffle. Order the stringozzi and do not overthink it.
The Food
Stringozzi are a thick, rough-surfaced Umbrian spaghetti made without egg — the texture grabs sauce like velcro. Here they arrive glossy with local olive oil, flecked with finely shaved Nero di Norcia black truffle and finished with nothing more than a little garlic and salt. It is a lesson in restraint that most truffle dishes fail to learn.
Follow with the piccione in umido (braised wood pigeon) if it appears on the board — game birds are a Foligno speciality and the kitchen handles them with the confidence of long practice. The tiramisu is made in-house and arrives in a portion that suggests the chef distrusts small desserts.
What to Know Before You Go
The osteria is tiny — 10 tables at most — and does not take reservations for lunch. Arrive at 12:30 when the door opens or expect to wait. Dinner is quieter and bookings are accepted by phone.
The wine list is short but honest: a carafe of local Trebbiano Spoletino for whites, a Montefalco Rosso DOC for reds. Both are priced at levels that suggest the owners consider wine a right rather than a revenue stream — roughly €8–10 for a half-litre carafe.
