Strangozzi al Tartufo Nero at Local Trattorias

Foligno sits at the gateway to the Valnerina, Umbria's prime black-truffle territory, which means the hand-rolled strangozzi pasta draped in a sauce of local Tuber melanosporum here tastes different — earthier, more pungent, more alive — than anywhere else you will eat it in central Italy.

What Strangozzi Are

Strangozzi are thick, rough-edged pasta strips rolled by hand without egg, giving them a chewy, porous texture that grips sauce with unusual tenacity. They are Foligno and Spoleto's answer to pici or bigoli, and the local shape of choice for truffle sauces.

The classic preparation is brutally simple: strangozzi tossed in good local olive oil, garlic, a little anchovy dissolved into the fat, and a generous hand of freshly grated or shaved black truffle. No cream, no distractions.

Where to Eat Them

Trattoria del Boccone on Via Garibaldi in the historic centre is a reliable, unfussy choice beloved by locals — the strangozzi al tartufo nero is a fixture on the menu and the wine list leans entirely on Umbrian producers from Montefalco and the Colli Martani.

For a slightly more polished setting, Ristorante Villa Roncalli on the southern edge of Foligno (Via Roma 25) has long been considered the benchmark address for refined Umbrian cuisine in the area, with a garden terrace and a serious cellar of Sagrantino di Montefalco.

Truffle Season and Shopping

Black truffle season peaks November through March, when prices drop and quality peaks. Summer black truffles (Tuber aestivum) are available June–August and milder in flavour but still excellent on pasta.

Buy fresh truffles to take home from the Mercato Settimanale on Tuesday mornings or from specialist shops on Corso Cavour — vendors will vacuum-pack them for travel if you ask.
