The tasting menu (around €90–€110 per person, excluding wine) is the definitive way to experience Díaz's cooking, which moves fluidly between hyperlocal ingredients — artichokes from the Vega Baja, local date vinegar, wild herbs from the sierra — and technically precise modern preparations. Rice dishes remain the emotional core of the menu; the arroz meloso with local vegetables and the arroz a banda (rice cooked in fish stock) are benchmarks of the genre.
The à la carte menu offers more flexibility and includes outstanding individual dishes such as the salt-crusted sea bass and a warm almond soup with local saffron that has become something of a signature. The bread, baked in-house, arrives warm with local olive oil and is worth the visit alone.
The Setting & Booking Ahead
The farmhouse setting — whitewashed walls, terracotta floors, a vine-draped terrace overlooking the palms — is relaxed rather than stiff, which makes the Michelin star feel like a bonus rather than a burden. Reservations are essential and should be made at least two to three weeks in advance, particularly for weekend lunches. The restaurant is located about 4 kilometres from the city centre on the road towards Santa Pola; a taxi or rideshare from central Elche takes around 10 minutes.
