Restaurante El Doncel

Named after Sigüenza's most famous stone effigy, El Doncel has earned a reputation as one of the finest restaurants in Castilla-La Mancha, holding a Michelin star and championing the region's larder with intelligence and restraint. Chef Enrique Pérez turns local ingredients — wild mushrooms, Alcarria honey, Serrano lamb — into dishes that feel both rooted and surprising.

The Menu and Signature Dishes

The tasting menu changes with the seasons but reliably features morteruelo — a rich, spiced game liver pâté that is the signature dish of Cuenca and Guadalajara provinces — presented here in refined, modern form. It is the dish that best explains what El Doncel is trying to do: honour tradition without being enslaved by it.

Lamb from the Alcarria highlands appears in multiple guises: slow-braised shoulder, crisp sweetbreads, a consommé so clear you can read the tablecloth through it. Pair with a bottle from the Guadalajara DO for a fully local experience.

The Room and Setting

The dining room occupies a beautifully restored stone townhouse a short walk from the cathedral, with thick walls, low lighting and an open kitchen visible through a glass partition. It feels intimate rather than formal, and the service matches — knowledgeable but never stiff.

A more affordable set lunch menu (menú del día) is available on weekdays and offers two courses plus wine for around €25 — an extraordinary way to access Michelin-starred cooking without the tasting-menu price tag.

Booking and Practicalities

Reservations are essential for dinner and strongly recommended for weekend lunches; book via the restaurant website or by phone at least a week ahead in high season.

El Doncel is located on Paseo de la Alameda 3, a five-minute walk from the cathedral along the main boulevard. Closed Sunday evenings and Mondays.
