Winstub zum Pfifferhüs
Installed in a 16th-century half-timbered house at 14 Grand'Rue, the Pfifferhüs is the kind of winstub that wine-route travellers dream about: dark wood panelling, tiled stove, checked tablecloths, and a menu that reads like a masterclass in Alsatian cooking. It has been feeding locals and pilgrims since 1981 and shows no sign of modernising — which is entirely the point.
What to Order
The choucroute garnie is the benchmark dish: a generous mound of slow-braised sauerkraut buried under smoked pork belly, Strasbourg sausage, a knack and a slice of salted pork shoulder, served with floury boiled potatoes. It is a cold-weather dish served year-round here because demand never drops.
For a lighter entry, the tarte flambée (flammekueche) arrives on a wooden board — paper-thin dough blistered from the oven, topped with crème fraîche, lardons and onion. Order the Munster-and-cumin version if it is on the specials board.
Wine Pairing and Atmosphere
The wine list focuses almost entirely on Ribeauvillé and Riquewihr producers, with a strong selection of Rieslings from the surrounding Grands Crus available by the glass. Ask the patron for the current Trimbach Clos Sainte Hune if budget allows — it is one of Alsace's most celebrated dry Rieslings and the estate is just down the road.
Lunch service is the more relaxed sitting; dinner fills quickly in summer. The dining room seats around 40, so book ahead by phone — the restaurant does not take online reservations.
