Trattoria Sostanza
Tucked along a narrow street near the Arno, Sostanza — nicknamed Il Troia by locals — is the oldest trattoria in Florence and looks it: marble-topped tables, wooden wainscoting, communal benches and a kitchen that has been making the same dishes since Garibaldi was still alive. Come here for the butter-fried bistecca and the legendary pappardelle with hare ragù.
What to Order
The signature dish is the petto di pollo al burro — a chicken breast cooked in a copper pan with an almost scandalous quantity of foaming butter until the edges caramelise. It is simple, perfect and irreproducible at home.
Start with pappardelle al lepre (wide pasta ribbons with slow-cooked hare sauce) or, in season, the ribollita: a thick bread-and-cavolo-nero soup that is the edible definition of Florentine winter.
The Room & the Ritual
Sostanza has no menu card — the waiter recites the day's dishes and you choose. There is no background music, no Instagram lighting, no cocktail list. This is the point.
Lunch is the preferred meal: the kitchen is at its best, the light through the frosted windows is lovely, and you can walk off the butter in the Boboli Gardens afterwards.
Booking & Practicalities
Reservations are essential and should be made at least a week ahead in high season. The trattoria is closed on weekends, which tells you everything about its clientele — this is a working Florentine lunch spot, not a tourist destination.
Expect to spend €35–50 per person with house wine, which arrives in a ceramic jug and is perfectly decent.
