The Food and the Setting
Chef Serge Gouloumès builds his menus around hyper-seasonal Provençal ingredients — local sea bass with fennel cream, Sisteron lamb with thyme jus, strawberries from the nearby Var plateau — presented with quiet elegance rather than architectural excess. The lunch menu offers the most accessible entry point to a serious kitchen.
The terrace is the star of the show: a broad stone platform shaded by parasols and ancient plane trees, overlooking a mosaic swimming pool and, beyond it, the forested hills rolling north towards Grasse. Even if you are not staying at the hotel, lunch here feels like a genuine Riviera occasion.
Beyond Dinner: The Spa and Pool
Non-guests can book treatments at the Shiseido spa, one of only a handful of Shiseido-branded spas in Europe, which occupies a beautifully converted stone building beside the main house. Signature treatments use Shiseido skincare products alongside local essential oils from the Grasse perfume industry.
The hotel also operates a cookery school in high season, with half-day classes focused on Provençal techniques — tapenade, socca, daube — taught by members of the kitchen brigade. Booking well in advance is essential as classes are limited to eight participants.
