Piquillo Peppers al Estilo de Lodosa
No visit to Lodosa is complete without eating its most famous product in its most classic form — piquillo peppers stuffed with salt cod or minced meat, bathed in a silky pepper sauce and served piping hot. Several bars and restaurants in the old town do this dish with the reverence it deserves.
Where to Eat Them
Bar Restaurante El Ebro on the main road through town is a reliable local favourite, serving raciones of stuffed piquillos alongside other Navarran classics like chistorra sausage and lamb chops grilled over vine cuttings. The dining room is unfussy and the portions are not.
For a more casual experience, order a pincho of pepper on toast at any bar around Plaza de los Fueros during the Thursday market — vendors often set up informal tastings of their own preserved peppers alongside a glass of local Rioja Oriental red wine.
Understanding the DOP
The Denominación de Origen Protegida for Piquillo de Lodosa covers peppers grown in a tightly defined zone around the town, picked by hand and roasted over beech-wood fires before being peeled and packed without water or preservatives. That process is what gives them their concentrated, slightly smoky sweetness.
When buying jarred peppers, look for the DOP seal and the words 'Piquillo de Lodosa' on the label — without them you are buying an inferior imitation, often from Peru or China, that shares only the name.
