For the quintessential Castilian roast — a whole suckling pig or milk-fed lamb carved at the table with nothing but a plate and good bread — Leganés has a clutch of old-school asadores and El Asador de Leganés on Avenida de España is the one locals steer family celebrations toward. The wood-fired oven has been the centrepiece of Sunday lunches here for decades.

What to order

Cochinillo asado (roast suckling pig) and lechazo (milk-fed lamb) are the non-negotiable stars, roasted in traditional clay dishes in a wood-burning horno until the skin crackles and the meat falls from the bone with the gentlest nudge.

Start with a plate of migas manchegas or cured Iberian meats, and finish with a slice of tarta de queso or the house torrijas if you visit around Easter — the seasonal desserts are taken seriously here.

When and how to go

Sunday lunch is the main event, when extended Spanish families pack every table from 14:00 onwards and the noise level climbs in the best possible way — book at least two days ahead for a weekend table.

The wine list leans heavily on Ribera del Duero and Rioja Reservas at prices that would make a Madrid city-centre sommelier weep with envy.
