Rillettes du Mans is to this city what Champagne is to Reims — a deeply local product with centuries of heritage and fierce civic pride. Eating them properly, in the right place, with the right wine, is one of the great simple pleasures of any visit to the Sarthe.
Where to Eat Rillettes Like a Local
Aux Rillettes d'Or on Rue Saint-Honoré is the city's most respected specialist charcuterie-restaurant, serving rillettes the traditional way: at room temperature, spread thickly on toasted country bread with cornichons and a glass of chilled Jasnières from the Loir valley. The recipe here has barely changed in 150 years.
For a more contemporary take, head to Le Grenier à Sel near the old town, where chef Éric Villain folds rillettes into modern small plates — rillettes croquettes with apple chutney, or a rillettes and foie gras terrine — without losing sight of the original's earthy, uncomplicated soul.
Understanding What Makes Them Special
True rillettes du Mans are made exclusively from pork shoulder, slowly braised in its own fat for up to eight hours until the meat can be pulled into long fibres. The result is coarser and more textured than the smooth rillettes you find in Tours — that roughness is deliberate and the mark of authenticity.
The Label Rouge certification, awarded since 1998, guarantees the pork comes from specific Sarthe farms, the cooking time and the fat ratio. If you want to take some home, buy from a Label Rouge producer at the Saturday market or from Aux Rillettes d'Or, which vacuum-packs jars for travel.
Pairing and Context
The classic pairing is a dry, slightly mineral Jasnières white wine from the Loir valley, about 40 km north of Le Mans — ask for it specifically in any local restaurant. A light, chilled Pineau d'Aunis rosé is the modern alternative and works beautifully in summer.
Several restaurants around Place des Jacobins offer a rillettes-and-wine lunch formule for around €14–18, making this one of the most affordable and authentic culinary experiences in the city.
