Tucked inside the ramparts on Rue Diderot, La Pourpre is the kind of quietly confident regional restaurant that French towns do better than anywhere else — a short, market-driven menu, local wine list and a terrace shaded by parasols where you can linger over a plateau de fromages without anyone rushing you.
What to Order
The signature starter is a warm Langres cheese tart with lardons and a frisée salad — a generous, savoury introduction to the plateau's most famous product. For mains, the truite de rivière (local river trout) meunière is reliably excellent, sourced from Haute-Marne fish farms and served with seasonal vegetables from the Wednesday market.
The cheese trolley at the end of the meal is not optional. It arrives laden with regional selections including young and aged Langres, Époisses and a sharp local chèvre. Ask the server to pour a small measure of Marc de Bourgogne into the crown of your Langres — it's the traditional way to eat it and transforms the flavour completely.
Practical Details
The lunch menu (entrée + plat or plat + dessert) is exceptional value for a sit-down restaurant inside a historic walled town. Evening à la carte is slightly pricier but the portions are generous and the atmosphere warmer as the dining room fills with locals.
Reservations are strongly recommended for Saturday lunch after the market, when every table fills quickly with shoppers rewarding themselves for an early start.
