Housed in a handsome stone building within the ramparts, La Faïencerie is the kind of quietly confident French restaurant that reminds you why you came to this country to eat. The kitchen leans on Haute-Marne ingredients — trout, Charolais beef, Langres cheese — and treats them with respect rather than reinvention.

What to Order

Start with the gratinée au Langres, a twist on French onion soup where the classic Gruyère is replaced by melted Langres AOP, adding a funky, creamy depth that is hard to forget. Follow it with the escalope de sandre (pike-perch) from the local reservoirs, pan-fried with butter and capers.

The cheese trolley arrives at the end of the meal with theatrical seriousness; accept a wedge of aged Langres alongside a glass of Marc de Bourgogne and you will have eaten as locally as it is possible to eat in this town.

Atmosphere and Booking

The dining room mixes exposed stone walls with contemporary lighting — neither fussy nor sterile. Service is attentive without hovering, and the wine list gives good coverage of Champagne and Burgundy at fair prices.

Reservations are strongly recommended for Friday and Saturday dinner and for Sunday lunch, which is a serious multi-course affair popular with local families. Weekday lunches are more relaxed and the two-course formule represents exceptional value.
