El Olivo Restaurant – Fine Dining Inside Dalt Vila
Perched on a stone terrace within the walls of Dalt Vila on Plaça de Vila, El Olivo has been one of Ibiza Town's most respected restaurants for over two decades, combining French-Mediterranean technique with the best Balearic ingredients in a setting that feels genuinely cinematic after dark.
What to Order
The menu changes with the seasons but reliably features slow-cooked Ibizan lamb, locally caught John Dory and a legendary warm chocolate fondant that regulars plan their visits around. The wine list leans heavily on Spanish and French bottles with a thoughtful selection of Ibizan wines from the Can Rich and Vinya den Palerm estates.
Portions are generous by fine-dining standards and the kitchen is not afraid of flavour — this is not minimalist cuisine but rich, confident cooking that respects its ingredients. The bread arrives with local olive oil and the island's own flor de sal, which sets the tone immediately.
The Setting
Tables on the outdoor terrace sit beneath a centuries-old olive tree and look across the illuminated square toward the cathedral — possibly the most romantic restaurant setting on the island. Book a terrace table specifically when reserving; the interior, while beautiful, misses the drama of eating under the stars inside a UNESCO World Heritage fortress.
Service is warm and knowledgeable rather than stiff; staff are happy to guide you through the menu in English, Spanish or German. Reservations are essential from June through September and strongly recommended in shoulder season.
