El Olivo Restaurant – Dalt Vila

Occupying a candlelit terrace on the atmospheric Plaça de Vila inside Dalt Vila, El Olivo has been one of Ibiza Town's most consistently excellent restaurants for over two decades — a place where the cooking is rooted in Ibizan tradition but executed with genuine finesse.

What to Order

Start with the bullit de peix, the island's signature two-course fisherman's stew: first a saffron-yellow broth ladled over rice cooked in the cooking juices, then the fish itself — grouper, John Dory, potato — served with allioli made from scratch tableside.

The sofrit pagès, a slow-cooked meat and potato stew scented with sobrasada and fennel sausage, is the other non-negotiable Ibizan classic and El Olivo's version is authoritative.

For dessert, the greixonera (a Balearic bread-pudding custard flavoured with lemon zest and cinnamon) is made daily and arrives warm — order it even if you think you're full.

The Setting

Tables spill onto the cobbled square beneath century-old olive trees strung with warm lights; the 16th-century stone walls of Dalt Vila rise on three sides, and the harbour glitters distantly below.

It is, frankly, one of the most beautiful restaurant settings in Spain — book the outdoor terrace specifically and request a table facing the square, not the street.

Practical Booking Advice

Reservations are essential from June through September; the restaurant fills by 9 pm every night in high season and walk-ins are rarely successful after 8:30 pm.

Lunch is significantly quieter and often cheaper for a similar menu — the €28 set lunch (two courses plus wine) is one of the best-value meals in Ibiza Town.
