Winstub Au Cheval Blanc, Lautenbach
A 10-minute drive up the Florival valley from Guebwiller, the village of Lautenbach harbours one of the most honest Winstubs in the region — Au Cheval Blanc, where the tarte flambée comes out of a wood-fired oven and the Pinot Noir is poured by the carafe without ceremony or pretension. This is where locals eat after hiking the Grand Ballon.
What to order
Start with the classic tarte flambée — crème fraîche, lardons and onion on a paper-thin crust that blisters at the edges — and follow it with the baeckeoffe if it's on the weekly menu, a slow-braised potato and meat casserole that is the Alsatian answer to a cold Vosges evening.
The cheese plate arrives with local Munster and a small pot of cumin seeds on the side; the locals know to scatter them over the cheese, and now so do you.
The setting
The dining room has the patina of a place that has not tried to be anything other than itself for decades — dark wood panelling, checked tablecloths, hunting prints, a bar where the regulars sit on the same stools they've occupied for years.
In summer, tables spill into a small courtyard shaded by a chestnut tree. Book ahead for weekend dinners; the room is small and fills quickly with hikers and local families.
