Marché de Saint-Gervais-les-Bains
Every Tuesday and Friday morning the pretty spa town of Saint-Gervais-les-Bains fills with the smell of raclette cheese, fresh-cut herbs and mountain honey at one of the Haute-Savoie's most authentic weekly markets. Less touristic than Chamonix's equivalent, this is where locals actually shop.
What to Buy and Taste
Look for Beaufort AOP — the 'prince of Gruyères' — sold in thick wedges by fromagers who can trace their wheels back to specific alpage herds grazing above the valley. The nutty, complex flavour bears no resemblance to the pre-packaged version sold in supermarkets.
Charcuterie stalls pile high with diots (local pork sausages traditionally cooked in white wine), dried bresaola from the Aosta Valley just over the Italian border, and slabs of lard paysan studded with herbs.
Seasonal produce shifts with the alpine calendar: wild strawberries and bilberries in July, ceps and girolles in September, and Savoy apples and pears through autumn.
The Town Around the Market
Saint-Gervais itself is worth a slow wander — the Belle Époque thermal baths (Thermes de Saint-Gervais) have been drawing visitors since 1806 and still offer day-access treatments, a welcome contrast to the adrenaline of Chamonix 25 km up the valley.
The town square's stone fountain and the 18th-century church of Saint-Nicolas provide a quiet, photogenic backdrop once the market stalls pack up around noon.
Saint-Gervais is also the starting point of the Tramway du Mont-Blanc, the highest rack railway in France, which climbs to the Nid d'Aigle at 2,372 m — a great add-on to a market morning.
