La Maison Carrier, Chamonix

Tucked into a 200-year-old farmhouse on the edge of Chamonix, La Maison Carrier is the definitive address for traditional Savoyard cuisine — think fondue savoyarde bubbling over an open flame, tartiflette layered with Reblochon, and game dishes that change with the hunting season. It is hearty, generous and completely without pretension.

The Food and the Setting

The dining room occupies a beautifully preserved mazot (alpine granary) with original timber beams, cowbells on the walls and a roaring stone fireplace that makes après-ski dinners feel genuinely ceremonial.

The fondue savoyarde uses a three-cheese blend of Beaufort, Comté and Emmental, served with cubed sourdough and cornichons. Order the charcuterie board to start and you will already be full before the main arrives — plan accordingly.

In autumn and winter, the menu leans into local game: venison from the Chamonix valley, wild boar from the Aravis range, and pigeon cooked slowly with mountain herbs. The wine list prioritises Savoie appellations, particularly the crisp Apremont white that cuts through the richness perfectly.

Booking and Getting There

La Maison Carrier is attached to the Hameau Albert 1er hotel on Route du Bouchet, a ten-minute walk from Chamonix town centre — or a short taxi ride if you plan to work through the wine list.

Reservations are essential from December through February and in July and August; walk-ins are occasionally possible at lunch on weekdays. The restaurant is closed on Tuesdays.

For a lighter, more casual version of the same kitchen, the adjacent Brasserie Albert 1er serves Savoyard classics at lower prices and without the need to book.
