La Moutarderie Fallot, Beaune (Day Trip) & Maille Dijon Boutique

Dijon mustard is one of the world's great condiments, and Burgundy is the only place you can taste it in its truest, freshest form. Two experiences stand out: the Maille boutique on Rue de la Liberté in Dijon, where mustard is pumped fresh from stone barrels, and the Fallot mustard mill in nearby Beaune, the last traditional stone-grinding mill in Burgundy.

Maille Boutique: Mustard as a Luxury Good

The Maille shop at 32 Rue de la Liberté has been selling mustard in Dijon since 1845. Today it stocks over 30 varieties — Chablis and truffle, blackcurrant, tarragon, green herbs — and offers free tastings on small bread rounds at a marble counter. The freshly pumped mustard from the three stone barrels (rotating seasonal flavours) is silkier and more pungent than anything in a jar.

Pick up a ceramic crock stamped with the Maille cockerel as a souvenir that will actually get used. The shop is small and popular; visit on a weekday morning to browse in peace.

Fallot Mill: Where the Magic Happens

The Edmond Fallot mill in Beaune (30 minutes by TER train from Dijon) offers a guided 'Moutardissimo' tour of the last working stone-grinding mustard mill in Burgundy. You'll see whole mustard seeds crushed between granite millstones — a process that preserves essential oils and gives Fallot mustard its distinctive depth — and taste your way through the range at the end.

The tour costs around €12 and must be booked in advance at fallot.com. Combine it with a morning in Beaune's own extraordinary covered market and the Hôtel-Dieu (the 15th-century charity hospital with a polychrome tile roof that rivals Dijon's own) for a perfect day trip.
