Chef Pascal Augé has been quietly running one of Deauville's most respected tables for decades, serving refined Norman cuisine in a warm, unpretentious room just steps from the harbour. Sole meunière, turbot with beurre blanc and a calvados soufflé that arrives trembling at the table are the dishes people come back for.
What to Order
The menu changes with the seasons and the catch, but the kitchen's heart is always Norman: locally landed fish cooked with classical French technique, cream sauces made with real Isigny cream, and apple-based desserts that remind you cider country begins just inland. The sole meunière here is considered a benchmark version in the region.
The cheese trolley is a serious affair, stocked with raw-milk Norman cheeses at perfect ripeness. Ask the sommelier to pair a glass of local Calvados Pays d'Auge with the Livarot — it is an unexpectedly brilliant combination.
Atmosphere and Booking
The dining room is calm and grown-up without being stiff — linen tablecloths, good glassware, and a clientele that mixes well-heeled Parisians on weekend escapes with serious local food lovers. It feels like the kind of place that has been doing things properly for a long time, because it has.
Reservations are essential in summer and during the September film festival. The lunch menu offers significantly better value than dinner and includes the same quality of cooking.
