Trattoria Sostanza

Founded in 1869 and still run with no-nonsense Florentine pride, Sostanza — nicknamed 'il Troia' by locals — is the city's most atmospheric old-school trattoria, where communal marble tables and a wood-panelled ceiling haven't changed in decades. The butter-basted chicken breast and the legendary bistecca alla Fiorentina make it a pilgrimage for serious eaters.

What to Order

The petto di pollo al burro is the dish that made Sostanza famous: a flattened chicken breast cooked in a scandalous quantity of foaming butter in a copper pan, served sizzling and golden. It is simultaneously simple and extraordinary.

For a full Florentine experience, start with a ribollita or pappa al pomodoro, then commit to the bistecca — a thick-cut T-bone of Chianina beef, charred outside and blood-red within, sold by weight and shared between two.

The Atmosphere and Booking Ahead

The dining room seats perhaps 40 people at long communal tables covered in paper, and the noise level — clattering plates, booming laughter, the hiss of butter in copper pans — is part of the charm. It feels like eating in someone's very confident grandmother's kitchen.

Reservations are essential and should be made at least a week in advance, especially for dinner. The restaurant is on Via della Porcellana, a five-minute walk from Santa Maria Novella station.
