Mercado de la Ribera
Stretching along the Nervión riverbank in the Casco Viejo, the Mercado de la Ribera is a 1929 Art Deco beauty that holds the Guinness record as Europe's largest covered fresh market. Three floors of pintxo bars, fishmongers, cheese stalls and vegetable vendors make it the beating culinary heart of Bilbao.
Ground Floor: The Food Hall
The ground floor is where Bilbao's chefs shop: glistening bonito del norte, spider crabs, kokotxas (cod cheeks) and salt-cod in every conceivable form fill the fishmongers' counters from early morning.
Basque farmers bring in white asparagus, piquillo peppers and the prized Gernika pepper — small, mild and destined for the frying pan — alongside heirloom varieties you won't find in any supermarket.
Upper Floor Pintxo Bars
Head upstairs to the bar level for a mid-morning pintxo crawl: small slices of bread loaded with tortilla, anchovy, Ibérico ham or txangurro (spider crab) paired with a cold Txakoli white wine or a glass of draft Estrella Damm.
The atmosphere is convivial and local — market workers, office staff and tourists all elbow up to the same zinc counters, which is exactly how it should be.
