La Maison Gousset
On a quiet street two blocks from the cathedral, La Maison Gousset is the kind of neighbourhood restaurant that Beauvaisiens keep to themselves. The short, handwritten menu changes weekly and leans hard into Picardy classics executed with real skill — ficelle picarde, andouillette grillée and tarte au sucre that makes you rethink dessert entirely.
What to order
Start with the ficelle picarde — a crêpe rolled around mushrooms and ham, blanketed in béchamel and grilled until bubbling. It's a regional staple that many restaurants phone in, but here the crêpe is made to order and the mushrooms are sautéed in butter with shallots until properly concentrated.
For a main, the andouillette de Picardie grilled over charcoal is served with a grain-mustard sauce and hand-cut frites cooked in beef dripping. The tarte au sucre — a brioche base spread with brown sugar and cream then baked until caramelised — is the only dessert you need to know about in northern France.
Atmosphere and booking
The room holds about 30 covers across bare wooden tables, with a zinc bar at the back where the patron pours a short but thoughtful wine list weighted toward the Loire and Burgundy. Lunch is the better value: a two-course formule with a glass of wine hovers around €18.
Booking is strongly recommended for Friday and Saturday dinner — the restaurant fills quickly with locals and the occasional pilgrim who has done their research. Call ahead or book via their Facebook page.
