Restaurant Le Champagne, Vitry-le-François

Tucked on the Rue Aristide Briand a short walk from the Place d'Armes, Le Champagne is the kind of no-nonsense French restaurant that travel writers keep to themselves — white tablecloths, a handwritten plat du jour and a wine list that leans heavily on grower Champagnes from the Côte des Bar. It is exactly where locals go for a proper weekday lunch.

What to Order

The kitchen does not chase trends. Start with a terrine de campagne served with cornichons and sourdough, or — when in season — a warm asparagus vinaigrette using spears from the Perthois plain just south of town. The signature main is a slow-braised pork cheek with lentilles du Puy, a dish that arrives in a generous cast-iron cocotte and demands a glass of Pinot Noir from the Aube.

For dessert the tarte aux mirabelles is the one to order in August and September, when the golden plums are at their peak. The kitchen sources them from a small orchard near Heiltz-le-Maurupt and the pastry shell is made in-house each morning — it shows.

Grower Champagnes by the Glass

The wine list is the real reason to linger. The owner has a personal relationship with several récoltant-manipulant (grower-producer) houses in the Côte des Bar, the southernmost and most underrated sub-region of Champagne, and stocks their wines at prices well below what you would pay in Épernay or Reims. Ask for a recommendation and you will likely be poured something from a producer you have never heard of — and immediately want to visit.

A Champagne aperitif before your meal is practically obligatory here, and the staff will suggest a blanc de noirs made from 100 % Pinot Noir that pairs beautifully with the amuse-bouche of gougères that arrives unbidden at every table.
