Knödel and Schlutzkrapfen at Gasthof Krone
No visit to Vipiteno is complete without sitting down to a bowl of hand-rolled Knödel in a proper South Tyrolean Gasthof, and Gasthof Krone on Via Città Nuova is the local benchmark — a wood-panelled inn that has been feeding travellers on the Brenner route for well over a century. This is where you eat the food of the mountains as it was intended: rich, unfussy and made from ingredients sourced w
What to Order
Start with Schlutzkrapfen — half-moon pasta parcels filled with ricotta and spinach, dressed in nothing more than browned butter and a snowfall of aged Graukäse (grey cheese). They are lighter than they sound and utterly addictive. Follow with Speckknödel, large bread-and-speck dumplings served in a clear beef broth that tastes of everything good about mountain cooking.
For a main course, the Tafelspitz (boiled beef with horseradish and chive sauce) is a Tyrolean Sunday classic that rarely appears on tourist-facing menus further south — here it arrives exactly as it should, with roasted potatoes and a side of pickled red cabbage.
The Setting and the Wine
The dining room is everything a Tyrolean Gasthof should be: dark timber panelling, ceramic tile stove in the corner, antler mounts above the bar and the low hum of local conversation. In summer, a small courtyard out the back catches the afternoon sun and is the best seat in the house for a post-hike Aperol Spritz.
The wine list leans into Alto Adige's exceptional white wines — ask for a glass of Kerner or Sylvaner from the Eisacktal DOC zone, which is grown just a few kilometres to the south and pairs perfectly with the richness of the dumplings.
