What to Eat

The menu changes daily but typically opens with a crudo platter of raw sea urchin, oysters and carpaccio di ricciola (amberjack), followed by spaghetti alle vongole veraci made with clams pulled from the local seabed. The secondi lean on grilled whole fish — orata (sea bream), spigola (sea bass) and the occasional rare catch like pesce San Pietro (John Dory).

Portions are generous and the cooking is unfussy in the best possible way: good olive oil, lemon, fresh parsley and nothing to distract from the quality of the fish. Pair everything with a chilled Falanghina del Gargano from a local producer.

The Experience Itself

Tables are set on the wooden platform of the trabucco structure, with the sea visible through the gaps in the planks beneath your feet and the nets hanging overhead. The sound of waves, the creak of the timber and the smell of salt air make it one of the most immersive dining experiences in southern Italy.

Reservations are essential in July and August — book at least a week ahead. Sunset dinner slots go first; lunch is slightly easier to secure and the light on the water at midday is spectacular in its own right.
