Restaurante Borgia, Viana
Named after the town's most notorious resident, Restaurante Borgia on Calle Mayor serves the kind of honest, ingredient-led Navarrese cooking that reminds you why this region's cuisine is quietly one of Spain's best. The menú del día at lunch is exceptional value and deeply local.
What to order
The kitchen follows the seasons closely, so the menu shifts throughout the year, but certain dishes are near-permanent fixtures. The white asparagus from the Ebro valley, served simply with mayonnaise and a drizzle of local olive oil, is a revelation if you visit in spring — fat, tender and nothing like the tinned version you may know.
In autumn, order the revuelto de hongos, a soft scrambled egg dish loaded with wild ceps foraged from the nearby sierra. The lamb chops (chuletillas al sarmiento) are grilled over vine shoots, a technique borrowed from the neighbouring Rioja wine country, and arrive charred and smoky at the table.
The wine list
Viana sits in the Denominación de Origen Navarra wine zone and the restaurant's list leans heavily on local bottles. The Navarra rosados — pale, dry, salmon-coloured rosés made from Garnacha — are the region's signature and pair beautifully with almost everything on the menu. Ask the staff for a recommendation and they will invariably point you to a producer from within 20 km.
For red wine drinkers, look for Tempranillo-based bottles from the nearby Rioja Alta zone, which is practically visible from the restaurant window. Prices are fair, with most bottles under €20.
Atmosphere and booking
The dining room is simple and unfussy — tiled floors, wooden furniture, framed photographs of local fiestas. Lunch service runs from 13:30 and fills quickly on Thursdays when market-goers pile in. Booking ahead for weekend lunch is advisable, especially in summer.
The menú del día (starter, main, dessert, bread and wine) typically costs around €14–16 and represents one of the best-value sit-down meals in the Camino de Santiago corridor between Pamplona and Logroño.
