La Tête en L'air Crêperie
Vannes has no shortage of crêperies, but La Tête en L'air on Rue des Halles in the old town consistently earns its reputation as one of the finest in the Morbihan. The buckwheat galettes are made with stone-milled flour from a local mill and cooked on cast-iron bilig griddles seasoned over years of use.
What to Order
Start with the galette complète — ham, egg and melted Comté — then graduate to the house speciality: a galette with Andouille de Guémené, the intensely smoky Breton sausage made from concentric rings of pork intestine that is an acquired taste and an absolute local obsession. Pair it with a bowl of cold Breton cider, served in the traditional ceramic bolée cup.
For dessert, the crêpe au beurre salé caramel is non-negotiable: a paper-thin wheat crêpe folded around a pool of salted-butter caramel made in-house. It arrives still sizzling from the griddle and disappears in about 90 seconds.
The Setting & Practical Tips
The dining room is small — maybe a dozen tables — with exposed stone walls, mismatched vintage chairs and the hypnotic sight of the crêpe-maker working two biligs simultaneously through a hatch. It's the kind of place that feels entirely unreconstructed and is better for it.
Reservations are strongly recommended for dinner and for Saturday lunch. If you arrive without one, the bar next door is the local tip for waiting with a glass of Muscadet. The crêperie is closed on Sunday evenings and all day Monday.
