Tolosa Saturday Market (Azoka)
Every Saturday morning, Plaza Zaharra and the surrounding arcaded streets of Tolosa's old town transform into a vivid open-air market that has been running without interruption since the 13th century. Farmers drive in from the Tolosaldea valley with produce you simply will not find in a supermarket.
What to Buy
The undisputed star is the Tolosa bean (Babarrun Tolosarra), a plump, dark-purple kidney bean with PDO status that local chefs treat like black gold. Stalls sell them fresh in autumn and dried year-round, vacuum-packed and ready to carry home.
Alongside the beans you will find txistorra sausages still warm from the smokehouse, raw-milk Idiazabal cheese wheels of every age, and bundles of leeks so fresh their roots are still damp with valley soil.
The Market Atmosphere
The arcaded Plaza Zaharra fills with the sound of Euskara — the ancient Basque language — as producers haggle cheerfully with regulars who have been buying from the same stall for decades. It feels nothing like a tourist farmers' market; it is simply where Tolosa feeds itself.
After shopping, duck into any of the pintxo bars on Calle Rondilla for a glass of txakoli and a plate of gildas (olive, anchovy and guindilla pepper skewers) to fuel the rest of your browse.
