Restaurante Frontón (Casa Nicolasa successor tradition)
Tolosa has a clutch of old-school sidrería-style restaurants where the bean is king, and Restaurante Frontón on Calle San Francisco is the most beloved by locals for its no-nonsense execution of the classic Tolosako babarrunak. A steaming clay pot of slow-cooked Tolosa beans with their traditional accompaniments is one of the most satisfying meals in the entire Basque Country.
The Dish You Must Order
Tolosako babarrunak arrives as a generous clay cazuela of inky-dark beans cooked only with water, salt and a splash of olive oil — the PDO rules forbid adulteration. On the side come grilled morcilla (blood sausage), pickled guindilla peppers and a hunk of bread to mop the glossy broth.
The beans themselves have a silky, almost buttery texture that makes the canned variety taste like a different species. Pair them with a carafe of house Rioja Alavesa and the meal becomes an event.
The Setting & Local Ritual
The dining room is all dark wood, checked tablecloths and football photographs — utterly unpretentious and full of multigenerational Tolosa families on weekend lunches. Service is brisk and warm in equal measure.
Lunch is the main meal here, as it is across the Basque Country; the menú del día (weekdays) offers the beans as a starter, making it extraordinary value. Reserve ahead for Saturday, especially during carnival season.
