Order the choucroute garnie and a carafe of Sylvaner and you will understand why this region's food culture is UNESCO-listed.
What to Order
The choucroute garnie is the benchmark dish: a generous mound of slow-braised sauerkraut buried under smoked pork belly, Strasbourg sausage, Montbéliard sausage and a knuckle of pork, served with floury boiled potatoes. It is an honest, rib-sticking plateful that requires no embellishment.
In cooler months the Baeckeoffe — a sealed terracotta casserole of three meats slow-cooked with potatoes and Pinot Blanc — appears on the menu. Order it 24 hours in advance if you want the full version; it is worth planning your itinerary around.
Atmosphere and Practicalities
The room fills fast at lunch with local tradespeople and day-trippers from Strasbourg, which is the best endorsement any winstub can have. The service is brisk and friendly rather than formal — do not expect long explanations of the menu, just good food delivered efficiently.
Wine pours are generous and priced fairly; ask for a demi of the house Pinot Gris rather than a full bottle if you are eating alone. The tarte aux mirabelles for dessert is non-negotiable in late summer.
