What to Order
The signature starter is a terrine of foie gras with Cointreau-soaked prunes from the Anjou orchard belt — a combination that sounds rich but lands with surprising elegance. In season, the white asparagus from the sandy soils near Doué-la-Fontaine arrives simply steamed with a mousseline sauce, and it needs nothing more.
For a main, the sandre (pike-perch) from the Loire is the dish that defines this kitchen: the fish is pan-roasted until the skin crackles, then set on a beurre blanc made with Muscadet and finished with a tangle of samphire. Pair it with a glass of Savennières from the list.
Practical Details
Book at least three days ahead for Friday and Saturday dinner; the dining room holds only 35 covers and fills quickly with a loyal local crowd. The lunch menu (two courses for around €22) is exceptional value and a good way to try the kitchen without committing to a full evening.
