Pintxos & Navarrese Wine on Calle Mayor

Sangüesa sits in the heart of a DO Navarra wine zone where garnacha rosés are produced within a few kilometres of the town square, and the bars on Calle Mayor pour them with a generosity that bigger cities have forgotten. Pull up a stool at Bar Txoko or the adjoining Bar Maitena on a Friday evening and you will find locals three-deep at the counter, plates of house-made pintxos appearing from the

What to Order

The pintxo canon here leans on quality Navarrese ingredients rather than architectural showmanship: a thick slice of local chorizo de Pamplona on sourdough, a wedge of cuajada (sheep's curd) drizzled with honey, or a croqueta de bacalao with a shattering crisp shell. Pair everything with a glass of chilled Ochoa or Chivite rosé — both bodegas are within 40 kilometres.

In autumn the menus expand to include wild mushroom revueltos made with rovellons (saffron milk caps) foraged from the forests of the Leyre sierra — a seasonal treat that locals guard jealously and that rarely appears on tourist-facing menus.

Sit-Down Dining

For a proper meal, Restaurante Las Navas on Calle Mayor offers a menú del día for around €13 that typically features a porrusalda (leek and potato soup), a main of slow-braised lamb shoulder from the Roncal valley, and a generous dessert of flan casero. It is resolutely unfashionable and absolutely delicious.

The town's proximity to the Bardenas Reales means that game — partridge, rabbit and wild boar — appears on autumn menus with a frequency that reminds you this is still a place where people hunt for the table rather than for Instagram.
