Restaurant La Chaumine (Saint-Joachim)
Tucked into the village of Saint-Joachim — the thatched-cottage capital of the Brière — La Chaumine is the kind of unhurried, family-run restaurant where the menu changes with whatever the local fishermen and market gardeners bring in that morning. What to order
The signature dish is anguille au beurre blanc — eel poached and finished in a classic Loire butter sauce — a preparation that has been made in this marsh for generations and tastes like nowhere else on earth.
Follow it with a local pike (brochet) terrine to start, and finish with a kouign-amann sourced from a nearby Breton-influenced bakery; the dessert card is short but well chosen.
Atmosphere & booking
The dining room is small — stone walls, low beams, a wood-burning stove in cooler months — and fills quickly on weekend lunchtimes, so book ahead by phone, especially in July and August.
Lunch menus represent outstanding value at around €18–€25 for two courses; the wine list leans sensibly on Muscadet and Gros Plant du Pays Nantais, both natural partners for freshwater fish.
