Garbure & Tartiflette at Auberge de la Neste
The Auberge de la Neste, tucked beside the River Neste d'Aure in the heart of Saint-Lary village, is the kind of place where the menu changes with the shepherd's mood and the cheese board arrives looking like a small geological event. This is where locals eat after a long day on the mountain, and that is always the most reliable recommendation.
What to Order
Start with garbure, the Gascon peasant soup of confit duck, white beans, cabbage and whatever root vegetables are in season — it is so thick a wooden spoon can stand in it, and on a cold Pyrenean evening nothing else will do. Follow it with a magret de canard from the Hautes-Pyrénées, served pink with a sauce of local honey and Jurançon wine.
The cheese course should include Bethmale, a semi-hard cow's-milk wheel from the neighbouring Ariège valley with a nutty, slightly grassy flavour, and Ossau-Iraty, the celebrated Basque sheep's cheese that pairs beautifully with the house cherry preserve.
The Local Wine & Digestif
The Hautes-Pyrénées sits between two serious wine appellations: Madiran to the north, built on the tannic Tannat grape, and Jurançon to the west, producing both dry and lusciously sweet whites from Petit Manseng. Ask the patron for a glass of moelleux Jurançon with dessert and you will understand why Henri IV was supposedly baptised with it.
Finish with a tot of Armagnac — the region's brandy, aged in black oak and far more characterful than its Cognac cousin — and you will leave the table feeling entirely reconciled with the world.
