Pastelería y Confitería Carlos, Murcia City

No visit to Murcia is complete without eating a paparajote — a lemon-tree leaf dipped in sweet, orange-scented batter, deep-fried until golden and dusted with cinnamon sugar. The leaf itself is not edible; you scrape the fragrant, custardy batter off with your teeth, and it is one of the most singular bites in Spanish gastronomy. What Makes a Great Paparajote

The quality of a paparajote depends entirely on the batter: it should be light, barely sweet, perfumed with lemon zest and a splash of anise, and it must be fried to order so the exterior is shatteringly crisp while the inside stays almost molten. Carlos has been making them to the same recipe since the 1950s, and the lemon leaves come from a grove the family has tended for generations.

The confitería also produces exceptional pasteles de carne — small, glazed puff-pastry parcels filled with spiced minced meat and hard-boiled egg, another Murcian signature that traces its roots to Moorish and Jewish culinary influence. Order a couple alongside your paparajotes and a café solo.

Murcia's Wider Sweet Tooth

Murcia's position as Spain's orchard means its pastry tradition is built on fresh fruit. In spring, confiterías across the city sell bienmesabe de albaricoque — a thick apricot cream spread on toast or spooned over ice cream — made from the prized Bullas and Jumilla apricots that ripen earlier here than anywhere else in Europe.

The city's most famous sweet shop is technically La Tartería on Gran Vía, but for a more lived-in, neighbourhood experience, Carlos and the cluster of traditional pastelerías around Plaza de las Flores offer the real daily Murcian sugar fix without the tourist markup.
