Winstub Le Chambard – Flammekueche at its Source

Flammekueche — the paper-thin Alsatian tarte flambée topped with crème fraîche, lardons and onions — is the region's most democratic pleasure, and Winstub Le Chambard on Rue du Sauvage serves one of the most consistently excellent versions in central Mulhouse. The wood-fired oven dates to the 1970s and the recipe hasn't changed since.

What to Order

The classic Flammekueche nature arrives blistered and crackling from the oven, the edges charred just enough to snap between your fingers. Order a second round with the Forestière variation — wild mushrooms, smoked lardons and a whisper of garlic — and a carafe of chilled Pinot Blanc from a nearby Alsatian domaine.

Save room for the Baeckeoffe, the slow-braised meat and potato stew that is Alsace's great winter comfort dish. The kitchen here makes it in the traditional earthenware pot sealed with pastry, and it takes 24 hours' notice to order — worth the planning.

The Winstub Atmosphere

A winstub is the Alsatian equivalent of a Viennese beisl — a wine tavern that serves simple, generous regional food in a room panelled with dark wood and hung with old enamel signs. Le Chambard nails the formula: low ceilings, communal benches, and a noise level that tells you everyone is having a good time.

The restaurant fills quickly on Friday and Saturday evenings; book a table by phone at least two days ahead or arrive at 19:00 on the dot when the doors open and claim a walk-in spot at the bar.
