Restaurante Txikiteo, Mondragón Old Town
Mondragón's old town bar circuit — the local txikiteo — is one of the most unselfconscious in the Basque Country, a genuine neighbourhood ritual of small bites and smaller glasses that has nothing to prove to visitors and everything to offer them.
How the Txikiteo Works
Starting from Plaza de los Fueros, the compact old town grid holds a dense cluster of traditional bars where the counter is always loaded with pintxos — slices of bread topped with anything from anchovies and roasted pepper to morcilla and quail egg. You order a drink, point at what you want, eat standing up and move on to the next bar. Repeat until satisfied.
Bar Untzaga and the bars along Calle Iturriotz are local favourites where the pintxos are made fresh each morning and the house red is poured without ceremony into small tumblers. Nobody is performing for tourists here; you are simply joining the daily rhythm of the town.
What to Order
The gilda — a skewer of guindilla pepper, olive and anchovy — was invented in the Basque Country and is the perfect one-bite introduction to the flavour logic of the region: salty, sour, briny and unapologetically bold. Order one at every bar and compare.
For something more substantial, look for bacalao al pil-pil (salt cod in its own emulsified gelatin sauce) or marmitako (tuna and potato stew) on the daily lunch menus, which typically run €12–15 for three courses including wine.
