Acetaia Villa San Donnino
Modena's traditional balsamic vinegar is one of the most misunderstood foods on earth — most people have never tasted the real thing. A visit to a working acetaia (vinegar attic) like Villa San Donnino just outside the city centre changes that permanently.
How Traditional Balsamic Is Made
Aceto balsamico tradizionale di Modena DOP is made from cooked Trebbiano grape must, not wine vinegar. It ages for a minimum of 12 years (and up to 25+) through a battery of progressively smaller barrels made from different woods — oak, chestnut, cherry, mulberry — each lending character. The result is thick, complex and genuinely sweet-sour.
Villa San Donnino's attic holds rows of barrels dating back generations. The family has been producing here since the 19th century, and the guide (often a family member) explains each stage with infectious enthusiasm.
The Tasting
The guided tour ends with a tasting that typically includes young condimento (the non-DOP everyday version), 12-year DOP and 25-year DOP — the differences are revelatory. The 25-year variety is drizzled over a sliver of aged Parmigiano and the combination is one of those travel food memories that stays with you.
Small bottles for purchase are priced honestly at source; you will pay less here than in a Modena shop for the same certified product. The 100ml extravecchio (25-year) bottle makes the most meaningful gift you can bring home from Emilia-Romagna.
Getting There and Booking
Villa San Donnino is on Via Medicina 1, about 3 km from the city centre — a 10-minute taxi or a pleasant cycle along flat roads. Tours must be booked in advance by email or phone and run in English and Italian.
Several other acetaie offer similar visits; Acetaia Pedroni in Rubbiara (20 km north) is another excellent option with a working osteria attached. But San Donnino's proximity to the city makes it the easiest first choice.
