What to Order and Where to Sit
Look for the official 'Authentique Bouchon Lyonnais' plaque — a certification scheme run by a local association that guarantees the restaurant cooks traditional recipes on-site. Chez Paul (11 Rue Major Martin, 1st arrondissement) and Daniel et Denise (156 Rue de Créqui, 3rd arrondissement, run by MOF chef Joseph Viola) are two of the most celebrated certified spots and both are genuinely excellent rather than tourist traps.
Start with a salade lyonnaise — frisée lettuce, lardons, a poached egg and croutons in a warm vinaigrette — then move to quenelle de brochet nantua (pike dumpling in crayfish cream sauce) or tablier de sapeur (breaded and fried tripe, which is far more delicious than it sounds). Finish with a praline tart, its filling an almost alarmingly pink crushed-almond caramel.
The Pot and the Culture of the Table
Wine is served in a pot lyonnais — a thick-bottomed 46cl glass bottle with no label, filled from the barrel, typically with a Beaujolais Villages or a Côtes du Rhône. The tradition deliberately removes any wine snobbery from the table; you drink what the patron pours and you enjoy it. It costs roughly €4–6 per pot.
Lunch is the main event in a bouchon, not dinner — service typically runs noon to 2pm and fills up fast. Book ahead for Thursday and Friday lunches, when local office workers pack every table and the noise level becomes wonderfully chaotic.
