Mercato Centrale di Livorno

Housed in a grand 19th-century iron-and-glass pavilion on Via Buontalenti, Livorno's Mercato Centrale is one of the most authentic food markets in Tuscany — and arguably Italy's best showcase for Tyrrhenian seafood. Arrive before 9 am and the hall roars with fishmongers, cheese sellers and spice traders who have claimed the same stalls for generations.

The Fish Hall

The ground floor is dominated by an extraordinary display of the morning's catch: triglie (red mullet), polpo (octopus), ricci di mare (sea urchins), and whole swordfish laid on beds of crushed ice. The vendors are theatrical and loud, and bargaining — while not obligatory — is quietly appreciated.

Look for the stalls selling cacciucco ingredients pre-assembled in paper bags: a Livornese shortcut that tells you exactly which fish go into the city's famous stew. It is a shopping list and a cookery lesson in one.

Beyond the Fish

The upper gallery holds stalls selling aged Pecorino from the Maremma, local olive oils pressed in the hills above Collesalvetti, and the fiery Livornese condiment known as salsa di pomodoro piccante — a chunky tomato sauce that locals spoon onto everything.

A row of tiny stand-up bars inside the market serve espresso and schiacciata (flat Tuscan bread) from 7 am. Eating breakfast surrounded by crates of live clams and shouting fishmongers is a quintessentially Livornese experience you will not find in Florence.
