Taberna La Manchica
A dark-wood, tile-lined taberna on Calle Bernabé Soriano that has been feeding Jaén families since 1884, La Manchica is the place to eat the city's two most distinctive dishes in the room where locals have always eaten them. No tourist menu, no English translations needed.
The Dishes You Must Order
Pipirrana jiennense is the city's signature summer salad: finely chopped tomato, green pepper, cucumber, hard-boiled egg and flaked salt-cod, dressed generously with local picual oil and sherry vinegar. It arrives in a terracotta bowl and tastes of nothing else on earth.
Andrajos con liebre is the other essential: thick, irregular pasta rags (the name means 'rags') slow-cooked with hare, wild mushrooms and saffron in a deep clay cazuela. It is a peasant dish of real complexity — order it in autumn and winter when the hare is at its best.
The Room and the Atmosphere
The bar front is lined with bullfighting memorabilia and old olive-oil tins, the walls are covered in hand-painted azulejo tiles, and the barman pours fino sherry from a barrel behind the counter without being asked. It feels unchanged since the 1950s because it largely is.
Lunch service runs 13:30–16:00 and fills quickly with local workers and a few in-the-know visitors. Book a table for Friday lunch when the weekend raciones come out and the noise level rises pleasantly.
Ordering and Pricing
A full lunch of two shared raciones, bread, house wine and dessert costs around €18–22 per person — exceptional value for cooking of this quality. The house wine is a young Condado de Huelva white that pairs beautifully with the pipirrana.
The bar also serves a short menu of tapas from 12:00 that includes free olives with every drink ordered — a tradition that still holds in many Jaén bars, unlike in more tourist-heavy Andalusian cities.
