Restaurante Lillas Pastia
Housed in a beautifully restored modernista casino building on the Porches de Galicia, Lillas Pastia has held a Michelin star since 2001 and remains the most exciting place to eat in Huesca — chef Carmelo Bosque turns hyper-local Aragonese ingredients into refined, imaginative dishes without ever losing sight of where he is.
The Food and the Philosophy
Bosque's menus change with the seasons and lean heavily on Pyrenean produce: Benasque valley lamb, river trout, foraged herbs from the pre-Pyrenees, and truffles from the Teruel hills. The tasting menu (around €80–€95) is the best way to experience the full range, but the à la carte is equally compelling.
Signature dishes have included a delicate truffle-scented egg with potato foam and a slow-cooked Ternasco shoulder glazed with local honey — simple-sounding descriptions that arrive as genuinely moving plates of food.
The Setting
The dining room occupies the ground floor of the Casino, a late 19th-century building with original tiled floors, ornate plasterwork ceilings and tall windows overlooking the Porches arcade. It feels grand without being stiff — the service is warm and unpretentious in the best Aragonese tradition.
Reservations are essential, especially on weekends. The wine list is strong on Somontano DO wines from the nearby Barbastro region, and the sommelier is genuinely knowledgeable about pairing them.
